Ingredients
Ingredient 1: 1 x cup non-dairy milk (almond, rice, coconut, oat or soy)
Ingredient 2: 1 x Handful mixed organic berries of choice (raspberries & others)
Ingredient 3: 4 x tablespoons organic chia seeds, black or white (See my shop HERE)
Ingredient 4: 1 x teaspoon pure vanilla extract
Ingredient 5: Optional: ½ tablespoon organic sweetener of choice:(cane/agave/honey/xylitol)
Ingredient 6: Organic Yacun Cocoa Nibs (See my shop HERE).
Ingredient 7: Lashings of raspberry sauce, heart, love, attention, mindfulness.
Preparation
Step 1
In a small bowl/ cup, combine the milk, sugar, and vanilla extract. Stir until combined. Sprinkle on the chia seeds and whisk/ stir them in thoroughly with a fork. You might want to drop a few berries broken up into this stage 1 - but keep the rest back for the topping.
***You can also pour some raw vegan raspberry sauce on the base of the bowl/ cup.
Step 2
Pour mixture into a pint jar and refrigerate overnight, or until it reaches the desired thickness, stirring occasionally which can be as little as a couple of hours.
Step 3
Serve pudding with mixed berries & organic yacun cacao nobs sprinkled on top.
Step 4
Dance around the kitchen singing "Om Shanti Om" x 3.
